This is an intriguing sparkling wine For starters, it's from Niagara in Canada Even more interestingly, unlike Champagne, the final adjustment is made by adding ice wine (from frozen grapes), which gives complexity and not just sweetness The finished result is a little less dry than Brut Champagne, with gloriously unique nuances of yeast, ripe apple honey, apricot and citrus zest
