The Rekalde Family started the Hiruzta enterprise with the intention of reviving Hondarribia's Txakoli producing legacy. The Hondarrabi Zuri grape variety, from which Txakoli is made, has the name of the town.
Due to the Hiruzta initiative and the cooperation of resident oenologist Ana Martin, a crucial character in the project, the tradition of making this wine, which was lost in the 17th century, is currently being resurrected.
She is also known for having a talent for producing exceptional white wines and Txakolis, and her work has won numerous accolades.
