In mediaeval Castile, the caadas, or ancient rights of passage for migrating sheep, were under the sovereignty of the Mesta, a strong coalition of sheep herders. The caadas, which serve as a reminder of historical rights and an example of coexistence with nature, are still shielded from construction and obstruction.

The northernmost region of Central Castile is where the Mesta Wines grapes are grown in high-altitude vineyards, where the continental environment features sunny days and chilly nights. This change in temperature throughout the day promotes grapes with rich fruit and superb varietal expression while still maintaining exceptional freshness.

The Mesta vineyards are part of an integrated ecosystem that is responsibly managed and organically farmed. Low disease pressure caused by low annual rainfall makes it possible to grow the vines naturally without the use of fungicides.

Only organic manure is utilised as fertiliser, and weed control is handled by light, superficial tilling. In cases of severe drought, rainwater is collected in a small reservoir and used for drip irrigation.
