Oenologists Séverine and Philippe Bourrier are the proprietors of the vibrant, organic Château de l'Ou in Montescot, Roussillon. When the estate was bought in 1998, they immediately switched to organic farming, which was at the time an avant-garde method in Roussillon. As a result, the estate is now Ecocert-certified.

The estate, which originally contained 30 hectares, including four hectares of olive trees and 26 hectares of vineyard, has been progressively growing by acquiring plots from all over the area; by 2018, it had grown to 45 hectares.

L'Ou, which in Catalan means "egg," alludes to an ovoid-shaped water resurgence that was present at the property's site and that Séverine and Philippe wished to revive with their project.

They work together to hand-craft wines using a variety of fermentation vessels, from concrete eggs, terracotta and sandstone amphora to barrels, and they cultivate the Roussillon terroir with its hot and parched soils.

The gorgeous, supple cuvées they create highlight this special terroir.
