Jean-Michel Gaunoux mother's family has had vineyard acres in the Côte d'Or for several generations, and he worked alongside his father at the Domaine Francois Gaunoux estate in Meursault before starting his own domaine in 1990.
Currently, six hectares of land in Meursault, Volnay, Puligny, and Pommard are planted in vines. Meursault has three Premier Cru sites: Genevrières makes elegant wines on red soils with a high proportion of iron and clay, and Les Gouttes d'Or is known as "drops of gold" because of the colour and shape of the flints in the soil. Perrieres produces the richest wines on clay and limestone soils covered with light-reflecting stones.
In the vineyards, Jean-Michel Gaunoux employs lutte raisonnée, or "reasoned struggle," which involves using chemicals less frequently, less violently, and only when absolutely required. Low yields are guaranteed by green harvesting, and picking is done by hand.
Traditional vinification uses 15 to 30 percent new oak, and after 15 to 16 months, the wine is bottled without fining or filtering.
