Venison (or beef) with savoury sauces; ceps would reflect the earthy notes in the wine. Mushroom based vegetarian dishes including risotto. Dishes cooked in wine or stock and finished with butter, not cream based. Rich slow cooked dishes in wine with fresh herbs - thyme, marjoram and oregano would work. Roasted spices - cumin, fennel and coriander seeds echo the earthy notes in the wine. Lamb spiced with ground cumin, coriander and sesame seed. Moving slightly middle Eastern. Charcuterie and hard cheeses. Because of the quite compact and earthy, meaty notes it will go well with all manner of roasted meats; definitely good with garlic. Santenots is among the most substantial premier cru on the Côte de Beaune and in considering the food partnering you need to be thinking more like a Côte de Nuit. It is classic Burgundy (traditional in a positive sense) and therefore very well suited to all the traditional Burgundian fare pâtes en croute and pommes boulangère etc. |
