Initially, Domaine Sigalas' winery was housed in the Sigalas family's customary canava. In 1998, maths professor Paris Sigalas upgraded and refurbished the winery with a brand-new structure close to the settlement of Oia.

Santorini's soil and the traditional pruning methods used there (the "giristi" and "koulouri" or "klada") make their grapes distinctive across the world. A rare and distinctive way of cultivation as well as a potent, full-bodied white wine with renowned minerality and acidity have been produced as a result of the sandy soil, which is composed of volcanic ash and pumice. 

One of the top wineries on the island, Domaine Sigalas produces a variety of PDO Assyrtiko wines in addition to vinifications of other native Santorini varietals, such as Aidani, Mavrotragano, Mandilaria, and Athiri.
