The grapes are gently pressed after being destemmed. In order to maintain the aromatics, the must is fermented in stainless steel tanks at a controlled temperature of no more than 18 to 20°C. When the residual sugar concentration reaches 2 to 3 grammes per litre it is then allowed to settle at cool temperatures and fermentation is stopped.
To create the distinctively delicate bubbles, this Prosecco is then refermented in pressured tanks with a maximum pressure of 2.4 atmospheres.
