Ailala is a viticultural endeavour started by winemaker Inma Pazos and sommelier Miguel Montoto that produces wines with a distinct personality based on the idea of terroir. It is based on the idea of being new, young, and fresh.
The wines at Ailala, which are made from indigenous types, highlight the distinctiveness of the North West of Spain, where the powerful, cooling effect of the Atlantic is paired with sustainable production methods that demonstrate the utmost respect for the land. Ailala is a Galician word with evident Celtic roots that is employed in traditional folklore. 'Ailala!, Ailalelo!' is the Galician version of Olé and, despite not having an exact translation, is a yell of excitement and fun.
