The winery of Feudi di San Gregorio in Basilicata is called Basilisco, and it is situated right in the middle of the Aglianico del Vulture DOCG, in the commune of Barile.
The Aglianico grape, the signature variety of southern Italy, thrives in the high altitude vineyards, volcanic soils, shaded by olive trees, and warmth of the sun in southern Italy.
The Basilisco winery is housed in a beautiful building from the 16th century in Via delle Cantine. Underneath the hamlet, a network of tunnels that were created in the 15th century for protection wind and turn. The caves that face the north keep a constant temperature of 16–18°C, making them perfect for storing wine and oil.
The vineyards are run on the principle that the best fruit may be produced with the least amount of interference by letting the land and vines find their own equilibrium.
Teodosio is made in Barile from a stunning, historic six-hectare vineyard where the vines are planted on traditional "capanno" trellises alongside fruit and olive trees. The vines are 5,000 vines per hectare and are trained using the Guyot method.
The vineyard is 500 metres above sea level. The volcanic, tuff stone, and clay-based soils give the finished wines their distinctive freshness and minerality.
Each grape is harvested at the ideal maturity during an entirely manual harvest.
