In 1867, Giuseppe Contratto started his own winery and refrigerated moscato from Monferrato, creating one of the first sparkling wines to referment in bottles in Italy.

The Contratto family also started construction on their historic cellars at this time, which wouldn't be finished until the turn of the 20th century.
