Jean-Pierre Ellevin decided to focus in the production of Chablis when he founded the current domain Brigitte Cerveau in 1975. It is located in the village of Clichée, in the centre of the Chablis appellation.
With knowledge passed down from father to son over the years, Jean-Pierre is the sixth generation of the family to own and manage the domain Brigitte Cerveau.
Jean-Pierre wed Brigitte Cerveau, who came from a winemaking family with roots in the French Revolution, in the 1980s. Today, 16 hectares are under cultivation by Jean-Pierre and Brigitte, and only Chardonnay is grown there.
Together with their son Alexandre Ellevin, who oversees winemaking, they are devoted to upholding tradition and crafting superb, aromatic wines that accurately reflect their place of origin.
