In Cafayate, located 1,700 metres above sea level and surrounded by the Andes Mountains, the vines are raised at a high height. The terroir of the region is characterised by the great altitude of Cafayate, one of the highest regions in the world suited for winemaking.
The grapes develop thicker, darker skins to defend themselves from UV rays as a result of the vines' exposure to strong sunshine, which increases the concentration of colour and flavour in the grapes.
Due to the diurnal temperature difference, the ripening season is prolonged, resulting in concentrated grapes that are full of flavour but have a balanced structure. There are several geological layers that make up the soils.
