Duck and game birds with sauces finished with redcurrant or cranberry. Not too sweet, but this will echo the wine’s profile. Aromatics ..five spice, star anise lightly used. Vegetarian dishes based on roasted root vegetables and nuts. White miso would offset the creamy fruitiness of the wine. The silky tannins make it an obvious partner with white fish when a red wine is preferred. It would strike a balance with surf turf dishes - cod and chorizo, trout wrapped in pancetta or parma ham. But it has a clarity and purity making it a good partner for more refined dishes than the richer denser dishes suitable for the 2018 Santenots. It would handle mildly spicy creamy coconut sauces. The red fruit, crispness and impression of sweetness of the 2019 vintage open up possibilities with fusion dish - lightly spiced Asia/European dishes. |
